Default Jimmy Dean's Breakfast Casserole

This was excellent if you are having a large crowd over for breakfast!

Jimmy Dean’s Breakfast Casserole


16 Ounces day old bread, cubed
1 Lb. Jimmy Dean sausage, cooked & crumbled (ok to use already cooked sausage and it seems to work fine)
1 Cup cheddar cheese, shredded
1 Cup Swiss cheese, shredded
10 Large eggs
3 Cups half-and-half
1 Teaspoon salt
1 Bunch green onions, chopped (ok use only about 2 green onions)
Dash or so of pepper

Arrange bread cubes in a generously buttered 9x13 pan. Sprinkle with cheeses. Combine and mix remaining ingredients. Pour over bread and cheese. Cover and refrigerate over night.

The next day, preheat oven to 350°
Uncover casserole and bake 1 hour

Someone told me you can replace or mix bread cubes with croutons; just add a little extra milk. Have not tried this but it sounded like an OK idea.

My phone call re freezing it ahead must have spurned you to submit this recipe! For those who haven't tried it, it is great! You can spice it up by the type of sausage you use. I buy bulk sausage and use it instead of Jimmy Dean--today I added a twist--sauteed some mushrooms along with the meat. You have to "hide" veggies any way you can for five-year-olds!
