Default Great Potluck Recipes?

Does anyone out there have a great potluck recipe? Something that doesn't have to be served hot? I am tired of my old standby's and need something yummy for an upcoming event...Thanks in advance.

It'll have to wait until tonite but the blender pie is great. No crust and all prepped in a blender then poured into a greased pyrex. The casserole is kind of difficult but worth the effort with fresh green chiles, cheese, eggs and cumin. Both are rich and never have leftovers to throw out.

Nice salads are always nice to take since a lot of potluck food is so heavy.

One I always like is mixed field greens (or you can substitute baby spinach), poached pears and/or dried cranberries, point reyes blue cheese, candied walnuts or pecans, and a nice vinaigrette. Balsamic vinaigrette goes very nicely with this. If you don't like blue cheese, goat cheese is also really good with this salad! You can take the dressing on the side and toss at the potluck. You can take some cheese crisps to go with it...take a baguette, slice very thin, top with some butter or evoo, garlic, and cheese (parmesan, romano or asiago are good) and cook until fairly crisp. These should stay fresh for a day or more.

Another solid choice is pasta salad. I like to make one with grape tomatoes, olives, artichokes hearts, and sundried tomatoes. You can also add diced chicken breast or shrimp to this mixture. I toss it with a caesar salad dressing and add some shaved parm on the top. It is really easy and tastes great.
