"brining" scared me off for a couple of years but now I'm cool. I'll be cooking Thanksgiving menu at Christmas. What is the brown bag method? This year I'm in charge of Apple Pie. Now morphing into Apple in Puff Pastry because I'm skipping making the crust. Corners, always cutting corners these days.

Ranch, I want to drop off a little Danish goody for you before you take off to Mexico...

I'm in The Barn every day at 0500 - 0530, then out in the Horse pastures 0800 - 1000.

Don't care for Turkey (as a dish). One has to 'tart' it up too much to make it edible methinks. Too bad the Pilgrims didn't bring some sheep with them; no 'tarting' up there needed. Mind you, a nice Mint sauce does enhance it some. Not Mint jelly, but Mint sauce. Stop drooling Icini!

I've had Deep Fried, Oven Roasted, Smoked, and BBQ'd. I prefer Deep Fried. It's easier to keep the turkey moist that way. Oven roasted, if done right, also is extremely good too. Too often, though, it's too dry. Smoked Turkey is a very close second to Deep Fried.

Come to think about it, I've had turkey cooked every way listed in the poll except the "baked in a Brown Paper Bag" method.

After much internet research and an experiment earlier this month, I will be brining the two 10 lb. turkeys overnight, then roasting them, unstuffed, in a HOT oven, in sequence. They will sit on carrots and celery (for a rack). The first one will be completely carved for serving, the second is for display, seconds and leftovers.
I got a lot of great ideas for preparing things ahead so that I can enjoy visiting with family and friends with hot food on the table.
